Babylonstoren, Sprankel 2017

Lying in the shadow of the Simonsburg and Du Toitskloof mountains of South Africa's Franschhoek Valley, the history of the sustainably farmed vineyards & orchards of Babylonstoren can be traced back to the 17th Century. Sprankel 2017 is made using 100% Chardonnay; it's fresh, well-balanced, with very fine bubbles. It has a gentle aromatic profile of tropical fruits, apples, lime and grapefruit, supported by a mineral backbone and soft acidity. The finish is long, with delicious biscuity notes from 4 years spent ageing in oak. This is a superb wine to pair with buttery seafood dishes.
